Easy & Delicious Blueberry Muffins
Ingredients:
1/2 cup softened butter
1 cup sugar
2 flax eggs
1 teaspoon vanilla extract
2 cup flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup soy milk (unsweetened)
2 cups blueberries, washed, drained & picked over
Optional:
3 teaspoons sugar
Instructions:
1. Preheat the oven to 375 F° and line the muffin pan with 12 liners.
2. Prepare 2 flax eggs and let sit aside for 5 minutes. (1 tbsp of flaxseed and 2.5 tbsp of water, mixed together)
3. Add the butter and 1 cup of sugar to a large mixing bowl. Mix together as best you can, using the back of a fork will help.
4. Add the flax egg and vanilla. Mix again.
5. Next add the salt, baking powder, and 1 cup of flour. Then add the soy milk and mix together. Finally, add the final cup of flour and mix again until blended well.
6. Crush 1 cup of blueberries with a fork, and mix into the batter. Then gently mix in the remaining 1 cup of whole berries.
7. Fill muffin liners with batter. Sprinkle a little sugar over the tops of the muffins, and bake at 375 degrees for 30 minutes. Check them before you take them out.
Makes about 12 muffins.
Plant-based baking alternatives:
*Earth Balance butter
*Flaxseed for eggs
*Unsweetened soy milk has less sugar and more protein.
*Whole wheat flour has more fiber.
*These are delicious and so easy to make but I wouldn’t eat them every day because they have more butter and sugar than I’d like to eat.
