Feta & Roasted Cauliflower Salad
Ingredients:
1 box of orzo pasta
1 head of cauliflower, chopped
2-3 garlic cloves, minced
2 Tbsp olive oil
Sea salt
2 large bags of spinach
1/2 red onion chopped
1 cup dried cherries (or dried cranberries)
Vegan feta cheese (I recommend @violife_foods )
Instructions:
1. Cook orzo pasta according to directions on the box and let cool.
2. Next toss cauliflower in olive oil, minced garlic & sea salt.
3. Then roast cauliflower at 425 °F for 20-25 min. Broil at the end to brown them a bit.
4. Washed and dry spinach then add to a large bowl.
5. Add chopped red onion, dried cherries, cooled orzo pasta, and roasted cauliflower.
6. Top with crumbled vegan feta cheese.
Makes about 6-8 servings.
For the dressing:
1/4 cup olive oil
1/4 cup lemon juice
1 tsp dijon mustard
1-2 tsp maple syrup
1. Whisk together. Taste and adjust to flavor preference.
