Garlic Broccoli Rabe & Sun-dried Tomatoes

Ingredients:
1/8-1/4 cup avocado oil
2lbs broccoli rabe, washed thoroughly
1 cup of sun-dried tomatoes, roughly chopped or whole
4-6 garlic cloves, roughly chopped or minced


Instructions:
1. Boil broccoli rabe for about 2 minutes until tender then drain.

2. In avocado oil, sauté garlic for 2 minutes.

3. Next add sun-dried tomatoes, broccoli rabe, salt & pepper and continue to sauté for another 5 minutes or so.

Makes about 4-6 servings.


*Although we kept the sun-dried tomatoes whole, I recommend chopping them.

*I also recommend mincing the garlic.
