Grilled Corn Guacamole Dip

Ingredients:
2 avocados (diced large chunks)
1 cup of corn (fresh, grilled, or frozen-thawed)
1 clove garlic, minced
1/2 jalapeño, seeded, diced VERY small
1/2 red bell pepper diced VERY small
1/2 cup cilantro, chopped
1 large lime, juiced
Salt and pepper to taste


Instructions:
1. Mix avocados, corn, garlic, jalapeno, red bell pepper, cilantro, and half a juiced lime. Let some avocado chunks become mushed and some stay chunky.

2. Season with salt and pepper and taste as you go. Add more lime juice if you like it more citrusy.

3. Dip some tortilla chips (baked is better), cucumbers, baby carrots, toasted whole wheat pitas or add it to tacos!
