Chickpea Salad Sandwich

 
 

Ingredients:
2 (15 oz) cans of chickpeas

1/8 cup red onion, chopped

5 celery stalks, chopped

3-4 pickle spears, chopped

1/4 cup dill, chopped

1/2 tsp freshly ground black pepper

1/2 cup Cashew Sour Cream

Sprinkle of salt


Instructions:
1. Add chickpeas to a large bowl and mash either with a potato masher or the back of a fork.

2. Add the rest of the ingredients to the bowl and mix everything together.

(The cashew sour cream is so easy to make and a healthier version of any you will buy in the store. Find the recipe in “Sauces, Dips & Dressings,” or if you buy from the store there are plenty of dairy-free options.)

3. Toast sourdough bread (or bread of your choice) and add chickpea salad, top with salt and pepper, and enjoy.

Makes about 3-4 servings.



*You can also serve on top of a salad, with crackers or cucumber chips or wrapped in lettuce or lettuce boats.

*This is very filling, high in protein and so delicious!

*Aim for BPA-free cans of chickpeas if possible.
