Marinated Tempeh
Ingredients
1 (8-ounce) package tempeh
¼ cup tamari (low-sodium optional)
2 tablespoon rice vinegar
2 tablespoons maple syrup
1 tablespoon extra-virgin olive oil
1 teaspoon harissa
Freshly ground black pepper
Optional:
½ tsp garlic powder
½ tsp onion powder
¼ tsp liquid smoke
Instructions
1. First steam your tempeh. Cut into cubes, place in a steamer basket, and set over a pot with 1-inch of water. Bring the water to a simmer, cover, and let steam for 10 minutes. This helps the tempeh soak up more flavor from the marinade.
2. In a small bowl, whisk together the tamari, vinegar, maple syrup, olive oil, harissa, and pepper.
3. Taste test the marinade and add more maple to sweeten or harissa for a kick.
4. Place the tempeh in a shallow dish and pour the marinade on top to coat. Marinate for at least 30 minutes.
5. Preheat the oven to 425°F and line a baking sheet with parchment paper.
6. Evenly spread the marinated tempeh on the baking sheet. Keep excess marinade to the side.
7. Bake for 10 minutes. Remove from the oven, flip the tempeh and add the rest of the marinade. Bake 10 more minutes or until the cubes are crispy.
8. Add to stir-fry, variety bowls, pizza, or salads.
*You can use siracha instead of harissa.
*Apple cider vinegar is a great substitute for rice vinegar.
