Cilantro Lime Rice
Ingredients:
2 cup brown jasmine rice, rinsed well, and drained
3 cups water
4-5 teaspoons extra-virgin olive oil (I love Trader Joe’s garlic olive oil)
2 garlic cloves, finely minced
5 scallions, finely chopped
2 teaspoon lime zest
½ teaspoon sea salt
3 tablespoons lime juice
1/3 cup finely chopped cilantro
Instructions:
1. Combine the rice, water, and 2 teaspoons of garlic olive oil in a medium saucepan. Bring to a boil, cover, and reduce to a simmer. Simmer for 20 minutes or so depending on the instructions on the package.
2. Once the rice is cooked, uncover, fluff with a fork, then add the garlic, scallions, lime zest and stir to combine.
3. Let cool for a few minutes then add the remaining 2-3 teaspoons of garlic olive oil, ¼ - ½ teaspoon salt, lime juice & cilantro.
4. Stir to combine and season to taste. Serve as a side dish with roasted veggies, add to tacos, or add as a base to a burrito or buddha bowl.
Serves about 8.
*This is a perfect side dish to batch cook for the week ahead.
