Homemade Vegetable Broth

 

Ingredients
4 carrots, chopped
4 stalks of celery, chopped
2 onions, chopped
1 cup parsley, finely chopped
1 cup of shiitake mushrooms, fresh
4 tomatoes, chopped
8 cloves of garlic, minced
1 inch of fresh ginger root, minced
1 inch of fresh turmeric root, minced
8 cups of water


Instructions:
1. Place all the ingredients in a large pot and bring to a gentle boil.

2. Turn heat down to low and simmer for about an hour.

3. You can leave the veggies in for a hearty soup or strain them out for just the broth which makes a perfect healthy base for other veggie soups. The broth is also a great alternative to oil for sautéing.

4. Feel free to season to taste, you can add salt, ground black pepper, red pepper flakes, oregano, or any other seasonings you prefer.


Makes about 4 servings.
