Flatbread Vegan Tacos

Ingredients:
Avocado oil
1 package of flatbreads (whole wheat)
1 red bell pepper, chopped
1 green bell pepper, chopped
1 package of mushrooms
1 zucchini, chopped
1/2 red onion, chopped
Meatless crumbles
Green butter lettuce leaves
1 tomato, chopped
1 avocado
Hot sauce


Instructions:
1. Chop the peppers, mushrooms, zucchini, and onion, then saute them in light avocado oil.

2. Add in meatless crumbles and continue to cook for 5-10 more minutes.

3. Toast whole wheat flatbread. Add 1-2 lettuce leaves, chopped tomatoes and avocado then top with the veggie saute mixture.

4. Add some hot sauce, fold like a taco and enjoy!

Makes about 5-6 tacos.


*You can also add your favorite shredded vegan cheese & salsa.
