5 Minute Meal: Veggies & Chickpeas
Ingredients:
1-2 bags of frozen veggies
1 bag of organic spinach
1 can of chickpeas
1 package of extra firm tofu
Avocado oil
Everything seasoning
Frank’s Red Hot sauce
Instructions:
1. Sautéed frozen veggies in water or light avocado oil.
2. Cube tofu and after a few minutes, throw into the saute.
3. Then add in chickpeas and finally the spinach.
4. Season to your own taste, I used Trader Joe’s Everything Seasoning and Frank’s Red Hot sauce.
Makes about 4 servings.
*Add this over brown rice or quinoa for a more filling meal.
*It’s ok to cook with frozen veggies, aim for organic if possible.
*Sautéing in oil is more flavorful, but if watching fat intake, water works too.
