Garlic Pasta with Broccoli

Ingredients:
1 box of pasta of your choice
5 garlic cloves, minced
Avocado or olive oil
1-1.5 cups cherry tomatoes, halved
2 cups broccoli florets, chopped
White cooking wine
Dried basil
Garlic powder
Salt & Pepper
Vegan parmesan


Instructions:
1. Cook pasta according to directions on the box. (different types of pasta have different cooking times)

2. Meanwhile, mince garlic and sauté in avocado or olive oil for a few minutes.

3. Then add cherry tomatoes and broccoli to the pan.

4. Add some white cooking wine and dried basil, garlic & salt. Cover and cook until broccoli softens up, yet has a little crunch.

5. Once done, add the garlic broccoli mixture to the pasta. Toss and add salt & pepper to taste.

6. Top with vegan parmesan cheese.

Makes about 4-6 servings.


*This is a super simple and filling meal.

*Add crispy tofu or white beans for more protein.
