Classic Potato Salad

Ingredients:
4 medium potatoes, diced
2 celery stalks, thinly sliced
1/2 medium red onion, chopped
1/4 cup fresh parsley, chopped
1/4 cup vegan mayonnaise
1 1/2 tbsp. Dijon mustard (or to taste)
1/2 tsp salt (or to taste)
1/8 tsp black pepper (or taste)


Instructions:

1. Steam or boil chopped potatoes until just barely tender, about 15 minutes, and then transfer to a large bowl.


2. Add celery, red onions, parsley. Stir to mix. 


3. Stir in plant-based mayo, mustard, salt, & pepper, and toss gently. Chill before serving.

4. Then add salt and pepper and just mix it all up. Top with more salt and pepper to taste.

Makes about 4-6 servings.


*Peeling potatoes is optional.

*For mayo, I suggest Follow Your Heart or Vegan Hellman’s (no one can ever tell the difference!)
