Grilled Veggie & Chickpea Orzo Salad

Ingredients:
2 boxes Jovial Cassava Orzo
1 can of chickpeas 
Juice of 1 lemon
1 lb asparagus, chopped
1 cup cherry tomatoes, halved
2 red bell peppers, sliced
1 cup Kalamata olives
1/2 cup toasted pine nuts

Dressing:
1 T red wine vinegar
4 T olive oil
2 cloves garlic, minced
2 spring onion, chopped
1/2 c chopped parsley
2 T chopped dill
Salt/Pepper to taste


Instructions:
1. Make 2 boxes Jovial Cassava Orzo

2. Marinate 1 can of chickpeas in the juice of 1 lemon.

3. Grill asparagus, cherry tomatoes & red peppers

4. Add grilled veggies along with chickpeas, kalamata olives, toasted pine nuts into cooked orzo.

5. Mix all dressing ingredients together then toss it into the orzo salad.

6. Toss everything together and enjoy!

This makes a huge batch, about 10-12 servings.


*The dill is pretty strong, which I like, but if you aren’t a dill fan you can always leave it out.
