Peanut Butter Rice Crispy Treats
Ingredients:
1 cup peanut butter
6 tablespoons maple syrup
1-2 tbsp melted coconut oil (optional, helps bars stick together)
1 tsp vanilla
Pinch salt
3 cups crispy brown rice cereal
1 cup dairy-free chocolate chips
Instructions:
1. Melt peanut butter and maple syrup together in a microwave-safe bowl for about 30 seconds.
2. Add to a large bowl with vanilla and salt. Stir in crispy rice cereal.
3. Press firmly into a parchment paper-lined 8x8 pan. (I use unbleached parchment)
4. Melt chocolate in 30-second increments, taking out to stir, until fully melted.
5. Pour over rice crispy bars evenly, I spread it out with a silicone spatula.
6. Drizzle with melted peanut butter and make a swirl pattern if desired.
7. Chill for 30 minutes until firm. Sprinkle with flaky salt and enjoy!
Makes about 10-12 servings.
*I didn’t use the coconut oil because I was trying to cut out some fat BUT they ended up falling apart easily, so maybe it’s a good idea to use the coconut oil after all. (I ate most of it with a spoon!)
*I wasn’t able to melt the peanut butter to make cool swirls, I kept overcooking it in the microwave, it was a mess.
*BUT it was INCREDIBLY delicious!
