Homemade Granola

 

Ingredients:
4 cups rolled oats
2 cups of raw almonds
2 cups of cashews
2 cups of walnuts
2 cups of pumpkin seeds
1/4 cup chia seeds
1/4 cup ground flax
1 1/2 tsp cinnamon
1.25 cup maple syrup
Heavy pinch of salt

Optional:
¼ cup hemp seeds
1 cup coconut flakes
1 cup dried cranberries


Instructions:
1. Mix everything together in one large bowl then spread onto two sheet pans lined with parchment paper.

2. Bake at 325 °F for about 40-45 minutes, until golden. Stir at least twice to promote even browning.

3. Add coconut flakes last 10 minutes or add the dried cranberries once out of the oven and cooled.

This makes a GIANT bowl.


*I suggest making it more like cereal, so adjust ingredients to the following measurements: 1/2 cup of each nut/seed instead of 2 cups and then double the oats from 4 cups to 8 cups.

* You can also eat this as a snack or sprinkle it on top of oatmeal or dairy-free yogurt.

*Store the extra in an airtight container, it will last you a while.
