Roasted Portobello Mushroom Sandwich

 
 

Ingredients:

Marinade:
2 tbsp olive oil
1/3 cup balsamic vinegar
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp smoked paprika
1/2 tsp salt


Sandwich:
2-4 portobello mushrooms
4 slices of sourdough bread
½ white onions, sliced
1 cup arugula
2-4 tbsp chipotle vegenaise
½ tomato, sliced
1 avocado, sliced
Salt & pepper



Instructions:
1. First make your marinade and mix it well. Set aside.

2. Wash portobellos and remove stems. Removing the gills is optional, just make sure you wash them well.

3. Marinate mushrooms for 10 minutes then roast them at 400 for 20 minutes, flipping halfway.

4. Sauté onions the last 5 minutes of the roasting time.

5. When mushrooms are ready, toast sourdough bread then spread on chipotle vegenaise. Add mushrooms, arugula, tomatoes, onions, avocado, salt, and pepper.

6. Be prepared to take bit bites!

Makes 2 sandwiches.


*You can also add the portobello mushrooms to salads, which is also delicious.
