Hulk Protein Muffins

Ingredients:
1 banana
6 oz. bag of spinach
3/4 cup almond milk
Vegan chocolate chips
2 cups spelt flour (whole wheat)
2/3 cup sugar
2 tsp. baking powder
1/2 tsp. baking soda
3 tbsp. flax meal
1/2 tsp. salt
2 tsp. cinnamon
1/4 cup vegetable oil
1 tbsp. vanilla extract
2 scoops of vegan protein powder (optional)


Instructions:
1. Put all dry ingredients in a bowl.

2. Then put oil, milk, vanilla, spinach & banana in a blender.

3. Blend on purée then add to the bowl with the dry ingredients & mix together.

4. Bake in muffin cups for 12-15 minutes at about 350 degrees F. Check centers with a toothpick to make sure they are fully cooked.

Makes about 12 muffins.
