Kale & White Bean Soup

Ingredients:
1 white onion, chopped
2-4 cloves of garlic, minced
2 cups carrots, chopped
1 bunch celery, chopped
4 cups vegetable stock
2 cups of water
1 bunch of kale, chopped
1-2 cans of white beans


Instructions:
1. Sauté onions, garlic, carrots, and celery in a little bit of olive or avocado oil.

2. Then add them to a pot of vegetable stock. You can also add 2 cups of water, depending on how hearty you want your soup.

3. Bring to a boil then add kale, celery, and white beans. This can cook for 20 minutes or so at a simmer.

Makes about 4 servings.


*Top your soup with croutons or garlic crostini, or buttered sourdough bread.

*Double this recipe to have pre-made meals for the week.
