Ingredients:
4 cups whole wheat pastry flour (not regular whole wheat flour)
1 tbsp baking powder
1 tsp baking soda
2 cups vegan buttermilk recipe below
1 1/2 cups apples, diced
1/2 cup raisins or other dried fruit
3 tbsp orange zest, fresh or dried

**To make buttermilk place 2 tablespoons of lemon or lime juice in a measuring cup, then add almond milk (any non-dairy milk will work) until the two-cup line is reached. Let sit/curdle for a few minutes, then it's ready to use.


Instructions:
1. Pre-heat oven to 375 degrees

2. In a large bowl, gently mix flour, baking powder, baking soda,

3. Pour in buttermilk and gently stir until mixed.

4. Fold in apples, raisins, and orange zest.

5. Transfer dough onto a large baking sheet lined with parchment paper and form dough into a loaf shape. (or make two small round loaves.)

6. Sprinkle oats on top if desired to make it look extra nice.

7. Bake about 32 minutes or until the crust turns golden and a fork comes out clean.

8. Serve warm, topped with jam, vegan butter, or other favorite toppings and enjoy.

Makes 1 loaf, servings of slices vary.
