Loaded Breakfast Burrito

 

Ingredients:
2 garlic cloves
¼ red onion
½ package of extra firm tofu
½ cup broccoli
Handful of kale
½ cup cherry tomatoes
Salt & pepper
1 large whole wheat tortilla
½ cup shredded vegan cheddar
Hot sauce (a sprinkle)


Instructions:
1.  Sauté garlic & red onions for 3-4 minutes. (oil optional)

2. Crumble extra firm tofu and add to the pan and cook for another 3 minutes.

3. Add broccoli, kale, sliced cherry tomatoes, salt & pepper, and cook for 5 more minutes.

4. Heat up a whole wheat tortilla. (I throw it right on my gas burner, but you can be civilized and heat it on a griddle or in the oven)

5. Add the scramble to the tortilla and top with shredded cheese, hot sauce & more salt and pepper.

This can make one large burrito or you can split into two smaller burritos.



*I always over stuff the burrito so I eat some of the fillings with a fork first then when there isn’t too much, I’ll roll it up.

*I also recommend adding sliced avocado on top.

*Two of my favorite shredded cheeses are @violife_foods or @miyokoscreamery and my favorite hot sauce is Frank’s Red Hot or Cholula.
