No-Bake Energy Bites

Ingredients:
1 cup dry oatmeal (I used rolled oats)
2/3 cup toasted coconut flakes
1/2 cup almond butter (or peanut butter)
1/2 cup ground flax seeds
1/2 cup vegan chocolate chips
1/3 cup maple syrup
1 teaspoon vanilla extract


Instructions:
1. Stir all ingredients together in a bowl until thoroughly mixed.

2. Cover and let chill in the refrigerator for half an hour.

3. Once chilled, roll into bites of whatever size you would like.

4. Store in an airtight container.

Servings vary but can make about 16-18


*Make a batch for snacks throughout the week.
