Roasted Carrots

Ingredients:
1 bag of carrots (1-2lbs)
2 tbsp. avocado oil or olive oil
Kosher salt & coarse black pepper


Instructions:
1. Wash and peel carrots, drizzle with oil on a baking sheet, sprinkle with kosher salt and coarse black pepper.

2. Bake in oven at 450° until knife tender, about 20-25 minutes depending on how thick the carrots are.

3. Watch that they don’t burn. You can add other spices to change it up a bit like a few red pepper flakes, Italian seasonings or some garlic.
