Scrambled “Egg” Brunch Bowl

Ingredients:
Egg alternative (you can a block of tofu or a bottle of @justeggofficial )
1 package of meatless crumbles (We used @lightlifefoods )
2 cloves of garlic
1/2 onion
1/2-1 cup mushrooms
1/2-1 cup green beans
1 cup kale
1/2 avocado
Salt & pepper
Siracha


Instructions:
1. In a nonstick pan (or use a touch of earth balance or avocado oil) make your “scrambled eggs”, then put them in a bowl to the side. *If using tofu instead of Just Egg, cook it with veggies below.

2. In another nonstick pan (or use a touch of earth balance or avocado oil) pan-fry your meatless crumbles, then add to the bowl.

3. Finally, sauté garlic and onion (in light avo oil, @earthbalance butter or just water) then add veggies (mushrooms, green beans and kale!) *If you’re using tofu, add it now.

4. Then add the cooked veggies/tofu to your bowl and top with sliced avocado, salt & pepper!

5. Drizzle a little Siracha on top and ENJOY!

Makes about 2-3 servings.


* You can also add brown rice and a side of whole-wheat toast or tortillas.

*Although it tastes great, mock meats are still processed so I recommend eating them only on occasion. (They’re still better than meat though!)
