Vegan Chili & Tater Tots

Ingredients:
1 tbsp chili powder
1 tbsp cumin
1 tbsp crushed garlic
1 tsp cayenne Pepper
1 tsp of salt
Ground pepper to taste
Crushed red pepper to taste
2 cans crushed garlic, onion tomatoes
1 can kidney beans
1 can hot chili beans
1 can of black beans
1 can corn
1 bag Trader Joe’s frozen grilled onions and peppers
1 bag of tater tots


Instructions:
1. Heat the tomatoes, garlic, and salt on medium-low for 10 minutes in a large pot.  

2. At the same time, in a separate pan, heat up Trader Joe’s onions & peppers until fragrant (a few mins) then toss in the large pot while the tomatoes are still heating up.

3. After 10 minutes, add all of the remaining ingredients to the large pot, except the corn. Stir thoroughly but gently (don’t want to smash the beans). 

4. Cover and cook on medium for 10 minutes, then add corn and cover for 10 more minutes. Taste and season to your preference. (More Chili powder for spice, more cumin for mild flavor & warmth, or garlic for a robust taste) 

5. While the chili is cooking, put the tater tots in the oven for 20 minutes, but flip them after 10 minutes to brown them evenly.

6. Serve the chili in a bowl and then top each bowl with crispy tater tots.

Makes about 6-8 servings.


*There are some canned ingredients in this recipe for convenience. Make sure to buy organic, BPA-free cans if possible.

*The longer the chili cooks covered on low, the better it will be.

*This is a great recipe for feeding large groups or for cooking and freezing to have for later.
