Loaded Quesadillas

Ingredients:
2 tbsp avocado oil
2-3 garlic cloves, minced
1/2 red onion, chopped
1 cup mushrooms, chopped
1 cup spinach
1 package (1 lb) Meatless Mexican Crumbles
Flour tortillas (whole wheat preferred)
1.5 cups shredded Colby Jack cheese
1/2 cup guacamole
1/2 cup salsa


Instructions:
1. In light olive oil sauté garlic, red onions, mushrooms, spinach & the meatless Mexican crumbles.

2. In another pan, use a little olive oil and lay out a large tortilla.

3. Add the sautéed veg to half of the tortilla and then the cheese on top! Fold the tortilla closed and let cook until it starts to brown, then flip over!

4. Once both sides are crispy, remove from heat.

5. Add guacamole, salsa and enjoy!

Makes 2-3 quesadillas.
