Walnut Mushroom Taco Meat

 

*Not very photogenic, but it’s one of my favorites.

Ingredients:
1 cup walnuts
2 cups mushrooms
1 tablespoon tamari
1/4 tsp onion powder
1/4 tsp garlic powder
½ tsp chili powder
Sprinkle of salt & pepper


Instructions:
1. Add walnuts, mushrooms, tamari, and spices to a food processor. Pulse a few times until all chopped and mixed well. Just don’t overprocess because it will get too smooth.

2. Add mixture to a pan and cook over medium heat for 3-5 minutes.

3. Add this to tacos, burritos, or salads.

Makes about 3 ½ cups.


* Leftovers can be stored in the refrigerator in an airtight container for 3 – 4 days.
